(Tiger Shrimp in Ginger)
Since its so easy to make and so tasty to eat I thought I would give it a French name that’s harder to say!
Okay . . . how does food fit on MY blog . . . how about this for a segue (I know its a stretch). Jesus said, "I say to you, do not be worried about your life, as to what you will eat or what you will drink; nor for your body, as to what you will put on. Is not life more than food . . . ? Matthew 6:25" Don't worry about what you are going to eat . . . but since we are going to eat, why not eat good! Planning a good meal can cut down on anxiety! And its quick and easy! So try my shrimp twist!
10 minutes prep! 5 minutes cooking!
Pre-prep: 30 minute minimum up to 3 hrs for marinade time
Shopping
One pound of 26-30 size raw tiger shrimp
8 cloves of garlic
1oz honey
1oz extra virgin olive oil
2 oz soy sauce
½ teaspoon ground black pepper
½ oz fresh ginger root
1/4 orange
your favorite greens, mixed baby greens or cold green veggie like snap peas, snow peas
Prepping
Pour in the olive oil
Dice the garlic and toss into a bowl big enough to hold everything
Chop the ginger and toss it in too
Pour in the soy sauce
Add the black pepper
Remove tail and devein the shrimp (be smart buy the shrimp deveined)
Rinse and pat dry the shrimp and toss them into the bowl, working them into the mix
Heat the honey in the microwave for about 35 seconds then pour it in hot and stir
Cover and chill for minimum 30 minutes
Cooking
Remove shrimp from refrigeration, let stand and cool to room temprature
Prep your veggie/greens while the shrimp stands
Place a small wok on high heat
Plate the greens/veggie while the wok heats up
Add about 1oz olive oil to the hot wok
Drain the marinade from the shrimp but you will want to keep the marinade
Toss the shrimp into the wok and cook 3-5 minutes depending on heat and taste
The last minute pour the marinade back over the shrimp let simmer for 1 minute and remove from heat
Squeeze the juice of the 1/4 orange over the shrimp
Enjoying
Place 7 of these tasty shrimp on top of the plated greens/veggies (more if there are only two of you and you can handle it!)
Take a table spoon and drizzle the marinade over the shrimp and greens/veggies
Keep the marinade on hand incase your taste buds beckon for more while you eat
Serve with a slightly sweet California Chardonnay, cold water on ice with a squeeze of your leftover orange, or a nice pale ale.
You can put the left over shrimp in a container, pour the left over marinade back in and pop into the fridge for a nice breakfast omelet ingredient waiting to be had in the morning or a luncheon snack for the next day!
